There are some good suggestions here Dawn. I would discard Canada only because it is so doable at any time. If you have the time, some cash, and a desire to really see something different, then you need to get off the North American continent.
Mexico is about the same story. Additionally, you would need to gear up with a lot of new (and fairly expensive) equipment to make that trip as it would be mostly salt water, bigger fish type of conquest.
New Zealand is an excellent choice, and as pointed out, the language barrier is non-existant for all intents and purposes. The fishing is excellent and you can easily travel around the country.
However, if I were in your position, I would give my most serious consideration to South America, specifically Chile or Argentina. The fishing is fantastic in a lot of areas, you can travel, if you are adventerous, cheaply if not quickly, and there are so many different things to see and experience that you will be amazed. The people are friendly, the different foods are a big part of the experience and the fishing can be fantastic. I know that folks here in the US are concerned about language barriers, etc. Bull, just get out and have a blast. I have travelled all over the world and if you keep a positive attitude, are friendly and willing to use a phrase book/dictionary and not demand to speak in English, the people will go out of their way to give you a hand. Adapt to their customs, traditions, foods and such and enjoy. I envy you the chance you have.
