Peru should be high on your list. Get into the Andes near Machu Pichu and fish big crawfish and stonefly patterns for rainbows in the Urubamba, Apurimac, or one of the other bigger rivers, then work your way into the Amazon, fishing as you go. The fishery changes dramatically with elevation (as does everything else). By the time you get to the basin floor you have long left the trout for payara, arauana, pacu, pirhana, peacock bass and innumberable other species. You can get to Cuszco for pretty cheap and once there arrange travel with the locals. They'll have no idea what you are talking about but that's part of the fun. Over time and some beer and coca tea you'll get your point across. You'll eat a lot of dust, spend days waiting for plans to evolve, and more time watching plans unravel. You'll meet some crazy people. It's what an epic fishing trip is all about. It's nice to know a little Spanish.
